Abstract: 
Basic world priorities of essential oils processing to stable natural flavours are determined. Perspectivity of vacuum frac tionating for essential oils processing that allows ob taining from one essential oil series of new concentrated flavours with improved stability and key components with va rious enrichment levels is proved.
